Start your journey in Zafra, often called “Little Seville,” a charming town with plenty of hidden gems. Explore the Church of Nuestra Señora de la Candelaria (13th century), the convents of Santa Catalina, Santa Clara, and Rosario, and the majestic 15th-century Palace of the Dukes of Feria, now the Parador. Wander through the Plaza Chica and Plaza Grande, vibrant hubs filled with bars and restaurants offering the best of regional gastronomy. Nearby, visit wineries, olive mills, or indulge in unique experiences such as a bullfighting demonstration or a ham safari through the Extremadura countryside. Don’t miss the whimsical “Capricho de Cotrina,” reminiscent of Gaudí’s creations, just 5 km away. End your day at the Parador restaurant, where Iberian pork takes center stage alongside traditional dishes like migas and lamb stew.
Discover Mérida, known as “Little Rome,” a city brimming with remnants of its glorious Roman past. Marvel at the Roman Theater, Amphitheater, and Circus—the latter being one of the best-preserved of its kind. Don’t miss the Roman Bridge over the Guadiana River, the Temple of Diana, or the Aqueduct of Miracles. Learn about Visigothic art at the Museum of Visigothic Art or explore the Alcazaba to trace the city’s Arab heritage. For a true Roman experience, relax in the thermal baths with a rejuvenating massage. And, of course, savor the region’s famous Iberian ham, a gastronomic delight you can’t skip.
Head north to Trujillo, a land of conquerors, where history comes alive in its majestic Plaza Mayor, dominated by the equestrian statue of Francisco Pizarro. Explore palaces like those of the Dukes of San Carlos and the Marqueses de la Conquista, or visit the medieval castle of Arabic origin, famously featured in Game of Thrones. Religious landmarks include the churches of San Martín and Santa María la Mayor. For a short detour, visit Cáceres, a UNESCO World Heritage Site renowned for its historical charm. Don’t leave without tasting Torta del Casar, an extraordinary local cheese.
Arrive in Plasencia, the gateway to the fertile Jerte Valley. Discover medieval walls, picturesque squares, and architectural gems such as the Old and New Cathedrals. The Parador itself, a converted 15th-century convent, offers a unique experience with its vaulted ceilings and historic charm. Venture into nearby Monfragüe National Park, a haven for birdwatching and Mediterranean flora. If time allows, explore the Jerte Valley or the Sierra de Gata for their natural beauty and artisanal delicacies, such as cherry liqueur.
Conclude your journey in Salamanca, a lively university town filled with history and culture. Admire the grandeur of the Plaza Mayor, explore the Casa de las Conchas, and visit both the Old and New Cathedrals. Walk the exterior terraces to enjoy breathtaking views of the city. Tour the University of Salamanca, the oldest in Spain, and try your luck finding the iconic frog on its façade. Don’t miss the Casa Lis, a stunning modernist mansion. Wrap up your visit with traditional tapas and local specialties such as Morucha beef and Guijuelo ham.
